Firstly download these firmware depending on your iPod make.
iPod Touch 1G OS 3.0 | iPod Touch 2G OS 3.0
Follow these steps:
1. Connect your iPod through USB and fire up iTunes
2. Select your iPod from the devices list
3. Hold the Shift key and press Restore
4. A file select windows will be opened, locate the iPod firmware you have downloaded
5. Wait until your iPod is finished updating
